A vegan food journal with fresh, delicious recipes.

Hello, I'm Denise.

I love to eat, garden, travel, and do yin yoga! I make plant-based recipes and photograph them from my 1920’s, remodeled apartment in Rhode Island. I've always loved fresh basil. Put some fresh basil leaves on a piece of cardboard, drizzle on a little olive oil and sea salt, and I'd be tempted to eat it! ❤️

How to Make Vegan Sugar Cookies

So delicious and so easy!

  • In a large mixing bowl – cream the softened vegan butter and granulated sugar using an electric mixer or by hand until light and fluffy.
  • Add the plant-based milk and pure vanilla extract to the butter-sugar mixture. Mix until well combined.
  • Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
  • Gradually add the dry and wet ingredients, mixing well after each addition until a soft dough forms. If the dough is too dry, add a tablespoon of plant-based milk until the desired consistency is reached.
  • Divide the dough into two equal portions and shape each into a disc. Wrap them in plastic wrap and refrigerate for at least 30 minutes. Chilling the dough will make it easier to handle and prevent excessive spreading during baking.
  • Preheat your oven to 350°F (175°C)—line baking sheets with parchment paper.
  • On a lightly floured surface, roll out one portion of the chilled dough to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets. Repeat with the remaining dough.
  • Bake the cookies in the oven for 8-10 minutes or until the edges are lightly golden. Be careful not to overbake, as the cookies can become crispy.
  • Once baked, remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
  • If desired, you can decorate the cookies with icing sugar, vegan-friendly frosting, or any other decorations you choose.
  • Once the cookies are completely cooled and decorated, they are ready to be enjoyed! Store them in an airtight container at room temperature for up to a week.
