I make this chickpea, avocado, and fresh dill sandwich on my homemade 5-ingredient vegan bread, which I lightly toast and spread with homemade vegan tahini. The ingredients are garden-fresh, or I shop at one of my area’s many indoor farmers’ markets in the winter months. I didn’t grow up eating chickpeas – my mother didn’t cook with them – but later in my adult life, I discovered chickpeas, and now they are a kitchen staple.
Chickpeas are a staple in my kitchen, and I always have several cans in the cupboards. They contain high protein levels and many other nutrients, including potassium, B vitamins, and iron. They are versatile and, upon roasting, can be crisp and crunchy.

Stack it high! This delicious sandwich with homemade vegan bread goes together in about 10 minutes.
- First, lay out your ingredients on a large flat surface. You’ll need room to stack your sandwich with fresh, delicious ingredients.
- Then start to assemble, and don’t be afraid to stack it high! I begin with the arugula and place it as the first layer of your sandwich. Don’t skimp here – every healthy sandwich needs a lot of greens!
- Scoop on your chickpea salad. You will have made this ahead so that it will chill. Some chickpeas and veggies might spill over, but don’t worry about that! Keep on stacking!
- Next come the perfectly ripened avocado slices and a small scoop of chickpea salad.
- Then comes the feathery fresh dill and an additional layer of arugula.
- Finally, spread on a healthy amount of tahini sauce and slice!

This chickpea salad sandwich is best served right after you make it. The avocadoes will brown once they’ve been cut. To get a jump on things, make the chickpea salad ahead of time and chill. At the last minute, slice the avocadoes and assemble everything right before to eat or just a few hours ahead of time if you’re packing it for lunch or a picnic.
You can enjoy this chickpea salad on its own. But it also pairs well with a salad for a heartier meal. It would be great with any of these recipes.

Chickpea Sandwich with Arugula, Avocado, and Tahini Sauce
Ingredients
- 1 loaf vegan loaf bread
- 2 cups chickpea salad
- 1 ripe avocado, evenly sliced
- 1 cup fresh baby arugula
- extra-virgin olive oil, for drizzling
- 1/2 tsp sea salt
- 1/4 tsp freshly ground pepper
Instructions
- Layout ingredients on flat surface - cover with parchment paper
- Cut vegan loaf bread into slices
- Add fresh baby arugula to sandwich
- Scoop in heaping tbsp of chilled chickpea salad
- Place sliced avocado on bread
- Add small scoop of chickpea salad
- Add rough cut fresh dill
