Cherry Tomato Tart
Few dishes are more beautiful than a classic French tomato and mustard tart. In this recipe, I put a vegan spin on the puff pastry and cheese, and it’s every bit as delicious as the original.
This classic tomato tart recipe is both simple and sophisticated. You’ll find a version of this in almost every restaurant and cafe in Paris; I first experienced it at a small outdoor cafe in Paris, and the entire experience was magical! Since then, I’ve included vegan puff pastry in my permanent rotation of favorite dishes.
Vegan puff pastry is so versatile. You can make your dish savory or sweet, and, as such, it inspires us to create our wonderful vegetable combinations and wonderfully flaky, crispy danishes. The options are endless if you have a good puff pastry, and I always keep my vegan puff pastry on hand in my freezer. The recipe takes some practice, but you’ll be hooked once you get the hang of it!

Cherry Tomato Tart w/ Vegan Puff Pastry Ingredients
This dish is so simple and calls for only a few ingredients.
- Vegan Puff Pasty – I make my own vegan puff pastry and always have some rolled and turned on hand. If you don’t have time to make it, you can buy it at your local market in the frozen food section.
- Fresh cherry tomatoes – I grow my own cherry tomatoes in the garden, but in the winter months here in New England, I buy them at the market. Whichever way, I try to get the freshest cherry tomatoes possible. Sweet, tart, and bursty!
- Dijon mustard – Dijon mustard has a tangy, sharp, and robust flavor with a bit of spice. It adds a nice, subtle zing to your cherry tomato tart without being overpowering.
- Vegan cream cheese – Vegan cream cheese complements the cherry tomatoes nicely and adds a creaminess to your tart when you bite it.
- Hard cheese – You can use any hard cheese your like. It adds flavor but also absorbs moisture when the tomatoes are baking.
- Fresh thyme – When you bake fresh thyme with tomatoes, it infuses them with flavor.
How to Make Cherry Tomato Tart w/Vegan Puff Pastry
It’s so easy you’ll wish you’d made it sooner!
First, roll out your vegan puff pastry dough to an 8×10-inches. Once rolled, put it in the refrigerator to cool for 20 minutes.
Second, place the vegan puff pastry on your work surface and cut a one-inch strip from two sides. Brush the two edges of the puff pastry with egg whites or milk and arrange the strips on the remaining pastry to form a nice border. Poke holes in the bottom of the puff pastry so it won’t rise. You only want the edges to rise fully and create a beautiful border.
Time to Assemble! Spread on the dijon mustard first. Cover the entire bottom of the vegan puff pastry, but avoid the border

Third, grate the hard cheese and spread it out evenly over the dijon mustard.
Fourth, using a frosting bag, layer on the cream cheese and then spread it evenly on top of the grated cheese
Fifth, evenly place the cherry tomatoes on the tart until the entire surface is full.
Then, add the fresh thyme.
Finally, score the border of your cherry tomato tart. This will make the presentation even more attractive. Drizzle on some olive oil and place in your preheated oven at 350 for 30 minutes.
Tomato Tart Variations
This recipe is very flexible. Use what you have on hand!
- Swap out the cheese – You can use vegan ricotta or vegan feta to replace the vegan cream cheese, and you can replace the hard cheese with vegan parmesan or any other hard vegan cheese. I get my cheeses from Violife.
- Swap out the herbs – You can use rosemary or sage instead of thyme. In the summer, when I have loads of fresh basil in my garden, I cover my cherry tart with fresh, leafy basil!
- Swap out the mustard – There are SO many wonderful varieties of mustard to make or buy at the market. Find a mustard that compliments the tomatoes and experiment with it. Enjoy!

Tomato Tart w/Vegan Puff Pastry
Ingredients
- 1/2 batch vegan puff pastry
- 8 oz ripe cherry tomatoes
- 1 tsp sea salt
- 1 tbsp dijon mustard
- 1 oz vegan hard chesse
- 1 sprig fresh thyme
Instructions
Prepare the vegan puff pastry
- Roll out sheet of puff pastry to 6"x6"
- Chill for 30 minutes
- Cut edges of pastry to 1"
- Brush on cream and stick strips to sides of pastry
- Dock the pastry with a fork
- Freeze for 20 mintues
Assemble the Tomato Tart
- Spread on a layer of Dijon mustard on the bottom of the tart
- Grate hard vegancheese on the tart
- Pipe on vegan cream cheese
- Arrange the fresh cherry tomatoes
- Sprinkle on fresh thyme
- Drizzle on extra virgin olive oil
- Bake at 400° for 30-40 minutes
- Cool for 10 minutes
- Cut into slices
