This Vegan Greek Yogurt Dessert is fresh, healthy, and not too sweet. It’s a visually interesting and beautiful dessert and is one of my personal favorites!

My vegan Greek yogurt dessert is a visual delight and makes an impression when served. I wish I had thought of it myself, but I first saw the original recipe in Matthew Kenney’s wonderful cookbook, “PLANTLAB”. Matthew’s signature style emphasizes the use of whole food, plant-based ingredients, such as seasonal fruits and vegetables, nuts and seeds, and grains to craft high-end dishes. His signature raw vegan lasagna, which features zucchini noodles, heirloom tomatoes, and house-made cashew cheese, is a shining example of this and is still a staple at Plant City – the original plant-based food court located in Providence, Rhode Island is15-minutes from where I live.

My vegan Greek yogurt recipe differs in that I make mine with soy milk and Matthew uses cashews and coconut milk. I’ve tried his version and I always come back to my own recipe. However, the inspiration to use no-cook, fresh strawberry syrup, and candied pecans came from PLANTLAB as did the assembly and presentation.

Reasons You’ll LOVE My Vegan Greek Yogurt Dessert.

There are alot of reasons to love this dessert, but here are just a couple.

    • It’s visually beautiful. I’ve experimented with making a vegan Greek yogurt desserts many times. I’ve served my variations to family and friends and this version is the most popular. “This is beautiful!” is what I often hear – which is wonderful since it’s SO much fun to make!
    • It’s delicious! The homemade vegan Greek yogurt is creamy and tangy with a lot of body. The fruits are fresh, sweet and tart. The pecans are crunchy and sweet. The combination is an undeniable winner.
    • It’s homemade, yet elegant. Generally, I’m not a fancy eater. I like food I can make quickly that I’ve made myself. I take a lot of pleasure in eating and preparing my own food. And, when I serve this homemade dessert to family and friends I’m serving it with love in my heart.

Ingredients & Equipment

(There are some ingredients for this vegan Greek yogurt dessert that need slicing and baking. Here’s the complete list).

    • Vegan Greek Yogurt – I make my own vegan Greek yogurt. But, if you find a store-bought brand you like or if you prefer to use another recipe that will work too. My vegan Greek yogurt is packed with probiotics but has no sweeteners or flavorings. It’s plain.
    • Fresh Fruits – I pretty much use whatever is in-season either from a local farm stand or at the grocery store. What might not be in-season here is being delivered from climates that ARE in-season. For example, I’m using kiwi, star fruit, and strawberries. But, in many cases, I use mango, blueberries, bananas, papaya, blackberries, and melon.
    • Candied Pecans – Candied pecans are SO simple to make and SO worth the little time it takes to make them. They top off this vegan Greek yogurt dessert perfectly.
    • No-cook strawberry syrup My no-cook, fresh strawberry syrup is just that. There’s no cooking involved and no thickeners or additives. I sweeten the strawberry syrup with maple syrup.
    • A molding ring. I used a 3.5”x2” molding ring to secure the yogurt in place and shape it into a round. These rings are inexpensive. I found mine on Amazon.

How To Assemble This Vegan Greek Yogurt Dessert

(The assembly is the fun part! Be patient here, but experiment if you like – that’s part of the fun!)

First, scoop your vegan Greek yogurt into your molding ring. I fill my about half way up and level it off with a spoon. Once full and leveled, gently pull away the molding ring. And, ‘Voilà!’, the yogurt should be centered on your plate and ready for the assembly.

Carefully, place the fruits on the yogurt vertically. I space them out as evenly as possible. For example, strawberries first, then kiwi, the starfruit and so on.

Next, place the candied pecans in the center and build them up a just a bit. I usually use 3-5 depending on the size.

Splash or drop on the fresh strawberry sauce. I use a small glass pitcher and make droplets around the edge of the plate. Sometimes I also splash on the strawberry sauce. Either way this is a wonderful touch in making this dessert visually appealing and delicious.

How to Eat Your Vegan Greek Yogurt Dessert

(Obviously, let’s dig in! But, let’s talk about some subtleties.)

    • Feel free to us your fingers especially with the star fruit. Star fruit is sweet and juicy and visually very appealing. The bright yellow adds a punch of color to your vegan Greek yogurt dessert. Star fruit is a delicious, nutritious fruit that is low in calories but packed with vitamin C, fiber, and antioxidants.
    • Spoon up the fresh strawberry sauce. The strawberry sauce is sweet and tart. Draw the sauce droplets onto your spoon and then add your yogurt and fresh fruit. Top off your spoon with a candied pecan.
    • Add extra fruit and pecans as needed. I keep dishes and bowls of extra fruit and pecans on the table for anyone who wants extras. I often want extra candied pecans.

Vegan Greek Yogurt Dessert Serving Suggestions

Vegan Greek Yogurt Dessert is best served chilled. I make it about an hour ahead and chill it in the refrigerator. Don’t leave it out on the table too long – the yogurt and fresh fruit might start to break down.

    • Spice things up! You can add spices such as cinnamon, cardamom, nutmeg, ground ginger, or cloves.
    • Go nuts with the nuts! Change up the nuts here. Walnuts, almonds, pistachios, macadamia nuts, and hazelnuts work well.
    • Swap the syrup. I prefer strawberry syrup, but you can also make blueberry, raspberry or even blackberry syrup. Experiment, fresh fruit syrups are always a winner.

Ingredients
  

  • 2 cups vegan Greek Yogurt
  • assorted fresh fruits
  • 1/4 cup fresh strawberry syrup
  • 1/2 cup candied pecans

Instructions
 

  • Make or purchase your vegan Greek yogurt. Your yogurt needs to be thick enough to support the fruit slices and candied pecans.
  • Prepare you fruit. I prefer to use whatever fruit is in season. Don't slice them to thin - you want the individual slices to stand up vertically in the yogurt.
