How to Make Dairy-Free Buttermilk Pancakes
Start by making your buttermilk.
- Choose Your Milk Base: Choose the plant-based milk you’ll be using. Examples are soy milk (high in protein), oat milk (less high in protein), and almond milk (high in protein). It’s best to choose a milk with a high protein content.
- Pour the milk into a large glass bowl or measuring cup: Choose an acid that will curdle the milk. Examples of this are lemon juice and vinegar. We use apple cider vinegar. The acid will quickly curdle the milk and you will easily see the chunks. This is the curdling process.
- Let Sit: Allow the curdled milk to sit for two minutes. This gives the milk the time it needs to completely curdle and absorb the milk.
Don’t be alarmed by the curdling process! Buttermilk made from cow’s milk is made in this same process. So, go for it!
Make Your Pancake Batter
Your dry ingredients are the base of your pancakes.
- Dry Ingredients: Add your dry ingredients to a large glass mixing bowl and mix it.
- Add Your Dairy-Free Buttermilk: Add your curdled buttermilk to your dry base of ingredients. We like to create a hole in the middle and pour the buttermilk into it.
- Add Your Dairy-Free Butter: Melt your dairy-free butter and then let it cool for about one minute. Then add it to your mixture.
- Add Your Vanilla: We like to add pure vanilla to our recipe. It adds a subtle, but delicious taste.
- Mix and Allow Bubbles to Form: Mix the ingredients by hand and allow bubbles to form. The bubbles are coming from the reaction of the baking powder and the curdled milk! It’s science!
You should see bubbles in your batter. This is what will make your pancakes super fluffy!
Cook Your Dairy-Free Buttermilk Pancakes
Now it’s time to cook!
- Heat a Frying Pan: Set your stovetop to a medium temperature and allow it to heat up.
- Add Oil to the Pan: We use canola oil to fry out pancakes. It’s more healthy than vegetable oil and provides a great hot point.
- Scoop Our the Batter: Your batter should be scoopable and not too running. Make several round scoops and place in your frying pan, which should be hot by now.
- Flip: Flip your pancakes when they start to further bubble up from the heat. You should be able to easily use a spatula to flip them at this point.
- Stack ‘Em High: Stack your pancakes high on a plate and cover to keep them warm
- Serve: Serve your pancakes for almost any meal of the day. Breakfast, brunch, lunch or dinner.

Ingredients
Dry Ingredients
- 300 grams flour gluten-free flour works too!
- 4 tbsp sugar
- 2 tbsp baking powder
- 1 tsp salt
Homemade Dairy-Free Buttermilk
- 1 1/2 cups soy milk other plant-based milks work too
- 1/2 cup water
- 2 1/2 tbsp apple cider vinegar lemon juice / all vinegars work too
- 2 tsos vanilla
- 4 tbsp vegan butter
Instructions
Make Dairy-Free Buttermilk
- Pour milk into glass container
- Add apple cider vinegar
- Wait two minutes or until mixture bubbles
Dry Ingredients
- Mix dry ingredients in large bowl
- Add dairy-free butternilk
- Add vanilla, buttermilk, and melted butter to dry ingredients
- Mix ingredients by hand until bubble form
- Heat friying pan on medium high
- Scoop in batter
- Wait for it to bubble
- Flip
- Serve
