I remember the first time I heard about ‘avocado toast’ at a small bistro in Massachusetts. My daughter, then a teenager, was SUPER excited and, as such, we ordered it. For me it was love at first bite! Since then, avocado toast has become increasingly popular. It’s a staple menu item in many cafes and restaurants and we make it at least once a week here at the Basil Food Journal kitchen.
Avocado toast has become a cultural phenomenon, with many people incorporating it into their diets and enjoying it as a healthy and delicious breakfast or snack option. Its popularity is often attributed to the rise of the health and wellness movement, as well as the growing popularity of plant-based and vegetarian diets. We love to get creative with the toppings!
Reasons We Love Avocado Toast

We make our avocado toast with great bread (here’s our homemade bread recipe) and ripe avocados. Even the ‘Plain Jane’ is delicious and it serves as the backbone for fun and creative toppings! Really, the sky is the limit! Adding chopped fresh herbs is a natural topping along with fresh veggies and home fries! Drizzle on olive oil, lemon garlic tahini sauce, fresh basil pesto, cilantro lime dressing, or whatever you have on hand to take your simple avocado toast to a new level of deliciousness and satisfaction. Perfect! After watching our video you know how to cut an avocado! It’s easier than you might have thought, but be careful with that sharp knife! Let’s get started with the basics and then start adding toppings:
THE PLAIN JANE – Our Plain Jane is the backbone of all your other avocado toast variations. Cut your ripe avocado and smash or cut it, but DON’T mash it too much. This isn’t guacamole! Keep it chunky. Add olive oil, sea salt, and freshly ground pepper and heap it onto your freshly baked toast. You might want to stop right here and enjoy the simplicity of the Plain Jane. THE GREEN GODDESS – I absolutely love this variation. In the spring, summer, and fall months, I simply harvest the greens from my garden. The bread is homemade and the greens are fresh and homegrown! Your fresh basil pesto goes on first followed up by the smashed avocado. Then pile on the toppings:

THE CAPRESE SALAD – Caprese salad is a perennial favorite, so it makes sense we’d want to use it as toppings for our avocado toast. This is a BFJ favorite and when served at a Sunday brunch at home it’s one of our more popular variations. Spread on the smashed avocados and layer on the toppings:

THE MEDITERRANEAN – This is Riann’s favorite! Probably, because it includes her world-famous homemade hummus. Get started by spreading on a generous layer of hummus and follow that up with spoonfuls of smashed avocados. Pile up tomatoes, cucumbers, and kalamata olives along with olive oil, sea salt, and fresh ground pepper. Come on! What’s not to love?!

THE DECONSTRUCTED QUAC – This is my personal favorite, because it’s bright, fresh, and has a nice tangy flavor. If you love fresh cilantro, as I do, you will also fall in love! Toast your bread and load on your smashed avocado. Follow that up with chopped red onion, fresh cilantro, and freshly squeezed lime juice. Drizzle on extra-virgin olive oil, sea salt, and freshly ground pepper. This variation will light up your taste buds! Yum!

THE SUNDAY BRUNCH -The Sunday Brunch is a hearty variation and leans into the kind of breakfast you might remember as a kid. Load your smashed avocado onto your homemade toast. Sprinkle with roasted and salted, pepitas, and crushed red peppers. This variation is A favorite with my friends and family who want an avocado toast ‘that sticks to the ribs!’ LOL!

Avocado Toast Tips and Tricks
You probably already have a variation you like, but our variations are unique and worth giving a try.

- Choose ripe avocados – The key to making great avocado toast is to start with ripe avocados. Ripe avocados are slightly soft to the touch and will give a little when you press on them. If the avocados are too firm, they will be difficult to mash and won’t have the same creamy texture.
- Use good quality bread like our homemade bread recipe – Choose a good quality bread for your avocado toast, such as whole grain or sourdough. The bread should be toasted until it is lightly browned and crispy.
- Don’t smash the avocado too much – Use a fork to mash the avocado until it’s chunky and still has great texture. This will make it easier to spread the avocado evenly over the toast.
- Season well – Sprinkle a little bit of salt and black pepper on top of the mashed avocado to enhance the flavor. You can also add other seasonings such as garlic powder or red pepper flakes.
- Add toppings – Get creative with your avocado toast toppings. Some great options include sliced tomatoes, crumbled feta cheese, fresh cukes, crispy tofu, or any number of veggies.
- Drizzle with olive oil or balsamic glaze – For an extra burst of flavor, drizzle a little bit of olive oil or balsamic glaze over the avocado toast.
- Serve immediately – Avocado toast is best when served immediately after it is prepared. This will ensure that the toast stays crispy and the avocado doesn’t turn brown.
Avocado Toast - 6 Satisfying Variations
Ingredients
- 1 loaf fresh bread
- 5 ripe avocadoes
- extra-virgin olive oil for drizzling
- sea salt to taste
- freshly ground pepper

Instructions
- Halve the avocado vertically and remove the pit (see our video on how to cut an avocado). Use a small knife to dice the avocado flesh while it's still inside the skin. Season the flesh with a squeeze of lemon juice and sprinkle it with sea salt.
- Scoop the diced avocado flesh out of the skin and onto the toasted bread. Mash the avocado with the back of a fork and top with your desired toppings.
