How to Make Avocado Dressing

So very simple!

    • Cut the avocado Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
    • Vegan Greek yogurt Add the Greek yogurt, olive oil, minced garlic, fresh lime juice, and cilantro to the blender or food processor.
    • Blend in a food processor – Blend all the ingredients until smooth and creamy. I use a small food processor for this which is much easier to clean than a full-size processor.
    • Taste – Taste the dressing and add salt and black pepper to your liking.
    • Pour and Store – Pour the dressing into a jar or container with a tight-fitting lid and refrigerate until ready to use.

Ingredients
  

  • 1 ripe avocado
  • 3/4 cup cool water
  • 1/2 cup extra virgin olive oil
  • 3 tbsp freshly-squeezed lemon juice
  • 2 tsp  fresh dill
  • 1 garlic clove
  • 1 tsp sea salt
  • ground pepper

Instructions
 

  • In a blender, combine the avocado, water, olive oil, lemon juice, dill, garlic, salt, and a few twists of fresh pepper. Blend the mixture until it becomes creamy and smooth. Transfer the dressing to a jar.
  • If you prefer a thinner consistency, you can stir in a small amount of water to achieve the desired drizzlable texture.
