This Crunchy Roasted Chickpea Recipe is on my short list of basic recipes that I used on a weekly basis. Long before I knew exactly what chickpeas were all about, I would load up on them at the beloved Wendy’s Salad Bar (now discontinued)! I never had a natural taste for red meat and I think it’s possible I was drawn to chickpeas for their high protein value. These days I pretty much have the skinny on chickpeas, and you’ll find them in many of my recipes. They bring an added dimension to any dish and making crispy, crunchy roasted chickpeas is an interesting and tasty way to elevate any recipe.

Crunchy, roasted chickpeas are a mainstay for vegans and vegetarians. These hearty, round beans are actually in the same legume family as kidney beans, black beans, lima beans, and peanuts. *Two main varieties of chickpeas are the larger round light-colored Kabuli-type, common in the United States, and the smaller dark irregularly shaped Desi-type often used in India and the Middle East. An excellent source of carbohydrates, protein, fiber, B vitamins, and some minerals, they are a nutritious staple of many diets.

How to Make Crispy Roasted Chickpeas

Roasting chickpeas is a simple process. Here are the steps you’ll need to get to those crispy, crunchy little balls of deliciousness.

    • Preheat the oven to 425 degrees:  Drain and rinse your chickpeas
    • Spread your chickpeas out on a surface to dry. Damp or went chickpeas won’t crisp in the oven, so it’s important to dry them first. Look for anyone loose skins and discard them.
    • Move your chickpeas to a baking sheet. Line your baking sheet with parchment paper and drizzle on the olive oil with salt and pepper.
    • Move your baking sheet to the preheated oven. I set the timer for 20 minutes to start, but you might want to roast longer depending on how crispy, and crunchy you want your chickpeas.
    • Remove from the oven and while still hot toss with your favorite spices.

Tips and Tricks for Great Roasted Chickpeas

Roasted chickpeas have a couple of special considerations to keep in mind. Here’s my list:

    • Eat them quickly. Roasted chickpeas can get mushy pretty quickly and don’t have a long shelf life. So gobble them as quickly as possible.
    • Don’t refrigerate!  They lose their crispiness quickly in the fridge.
    • Add some spice! – I do this as soon as the roasted chickpeas cool down enough to handle. Then I’ll toss them with spices – chili powder, paprika, curry powder – whatever you think you’d like.

How to Use Oven Roasted Chickpeas

You can pop them directly into your mouth if you’d like! But, adding these crispy, crunchy little balls of nutrition is great too. Here are a few ideas:

      • Cherry Tomato Pasta. This cherry tomato pasta recipe is so simple – cherry tomatoes, basil, and pasta are a natural combination. Add some chickpeas and add some crunch!
      • Cherry Tomato Couscous I LOVE this recipe and the roasted chickpeas bring protein and crunch. The chilled, pearled couscous along with tomatoes, cukes, and other ingredients makes for a wonderful summer salad that’s light and definitely will help you cool off!
      • In a grain bowl. They’d be excellent in my Buddha Bowl or Power Protein Bowl.
      • On pizza. The sweet, yet tart flavor really adds. a lot to a cheesy pizza.
      • In tacos. Your taco recipe will thank you for this! Roasted chickpeas bring a new dimension to any taco recipe.
      • In salads. We’re used to raw veggies in salads – which is great, but adding roasted veggies is equally good and you can start with these roasted chickpeas.
      • On nachos. Your roasted chickpeas will add a new flavor to an old favorite.

    So, enjoy some crispy, crunchy roasted chickpeas with a quick salad or pasta dish.
