Chickpeas - also known as garbanzo beans - are a mainstay for vegans and vegetarians. Roasting chickpeas is quick and easy and brings some crispy, crunch to many of your everyday recipes.
Preheat the oven to 425 degrees. Drain and rinse your chickpeas.
Spread your chickpeas out on a surface to dry. Damp or went chickpeas won’t crisp in the oven, so it’s important to dry them first. Look for anyone loose skins and discard them.
Move your chickpeas to a baking sheet. Line your baking sheet with parchment paper and drizzle on the olive oil with salt and pepper.
Move your baking sheet to the preheated oven. I set the timer for 20 minutes to start, but you might want to roast longer depending on how crispy, and crunchy you want your chickpeas.
Remove from the oven and while still hot toss with your favorite spices.
