Chickpeas - also known as garbanzo beans - are a mainstay for vegans and vegetarians. Roasting chickpeas is quick and easy and brings some crispy, crunch to many of your everyday recipes.

Instructions
 

  • Preheat the oven to 425 degrees.  Drain and rinse your chickpeas.
  • Spread your chickpeas out on a surface to dry. Damp or went chickpeas won’t crisp in the oven, so it’s important to dry them first. Look for anyone loose skins and discard them.
  • Move your chickpeas to a baking sheet. Line your baking sheet with parchment paper and drizzle on the olive oil with salt and pepper.
  • Move your baking sheet to the preheated oven. I set the timer for 20 minutes to start, but you might want to roast longer depending on how crispy, and crunchy you want your chickpeas.
  • Remove from the oven and while still hot toss with your favorite spices.
