How to Make Vegan Pasta Primavera

Making vegan pasta primavera is very easy, and you’ll love it!

First, bring a pot of salted water to a boil and cook the dairy-free pasta according to the package instructions until al dente. Drain and set aside.. Don’t cook your pasta all the way! You’ll be adding it to the saucepan later when you combine the ingredients and it will finish cooking through at that point.

Meantime, make the dill-infused cashew cream. Chop some fresh dill and add it to the cashew cream. Click here for my dairy-free cashew cream recipe.

Then, sauté the garlic and shallot until softened. Add the fresh peas (or frozen) and saute. If you’re using fresh peas, saute until about half-tender. They’ll finish cooking when you’ve added all the other ingredients.

    Add the asparagusIf the asparagus is raw, add it to the garlic, shallots, and peas and saute until half-tender. If you’ve roasted your asparagus ahead of time, like I did, add it on top of the pasta.

    Next, add the cooked pasta and the dill-infused cashew cream. In increments, add spoonfuls of the cashew cream until creamy. Depending on how you prefer the creaminess, you add more or less.

    Then, saute the garlic and shallot until softened. Add the fresh peas (or frozen) and saute. If you’re using fresh peas, saute until about half-tender. They’ll finish cooking when you’ve added all the other ingredients.

      Combine, the ingredients. Toss everything together until the pasta and vegetables are coated in the creamy sauce. Cook over low heat for a few minutes to warm everything through.

      Add, fresh cherry tomatoes. Halve several sweet cherry tomatoes and arrange them on top of your dairy-free pasta primavera.

      Top off, with fresh basil leaves – Fresh basil deliciously tops off this wonderful plant-based pasta primavera.

          Vegan Pasta Primavera with Spring Peas & Asparagus

          Pasta Primavera with Spring Peas & Asparagus is a tried and true American dish (it's not Italian!) We put a vegan twist on things while sourcing all the veggies right from our own home garden.

          Ingredients
            

          • 2 cups pasta (of your choice)
          • 1 cup fresh asparagus (I used roasted asparagus)
          • 1 1/2 cup fresh snap peas (frozen will do just as well)
          • 1 cup fresh halved cherry tomatoes
          • 1 tbsp extra virgin olive oil
          • 1 clove fresh garlic (diced)
          • 1 cup fresh basil
          • 1 cup fresh dill-infused cashew cream

          Instructions
           

          • Bring a large pot of salted water to a boil. Add pasta and cook for 12 minutes, or until al dente. Drain pasta and set aside.
          • In the meantime, pour olive oil into a 12-inch skillet over medium heat, tilting the skillet until it is evenly coated. Stir garlic and shallts and cook until tender.
          • Add fresh peas and stir on low to medium heat until tender.
          • Add aspargus and stir until tender.
          • Add cooked and well-drained pasta
          • Add cherry tomato halves and continue to stir for one minute
          • Then fold in spoonfuls of dill-infused cashew cream until desired creaminess.
          • Salt and pepper to taste.
          • Add handful of fresh basil to the top.
          • Serve!
