How to Make a Mexican-Inspired Grain Bowl

So easy to make! So, let’s get started!

    • Cook the rice or quinoa according to the package instructions and set aside – Grains are essential to grain bowls, providing a healthy source of carbohydrates, fiber, and protein. Brown rice and quinoa are excellent choices for this recipe but feel free to use your favorite grain.
    • Char the corn – Heat the olive oil over medium heat in a large skillet. Add the corn and cook for 5-7 minutes or until the corn is slightly charred. Set aside. Charred corn adds a smoky flavor and a touch of sweetness to this grain bowl recipe. You can use frozen corn if you don’t have fresh corn.
    • Assemble – Combine the cooked rice or quinoa, black beans, red bell pepper, charred corn, and chopped cilantro in a large shallow bowl. Mix well. Make your dressing. For our Mexican-inspired today, we’re using Cilantro Lime Dressing, but you can use Green Goddess Dressing, Garlic and Lemon Cashew Cream, Lemon-Garlic Tahini, and Lemon-Honey Vinaigrette.

Mexican-Inspired Grain Bowl Variations

Let your imagination wander. It’s all good when making a grain bowl!

    • Swap the brown rice or quinoa for another grain like farro or barley to change up the texture and flavor of the bowl.
    • Swap the veggies – Use different vegetables like roasted sweet potato, sliced cucumber, or shredded cabbage for variety and additional nutrients.
    • Add a protein source – Tofu, tempe, jackfruit, or chickpeas to increase the protein content of the bowl.
    • Just a dollop – Top the bowl with a dollop of Greek yogurt or sour cream for added creaminess and tanginess.

  • Assemble bowls with a scoop of rice, red pepper, black beans, fresh cilantro, fresh greens and top with pepitas.
  • Drizzle with the sauce. Season to taste with additional salt and pepper, if desired, and serve.
  • We assembled these ingredients into 2 bowls (although the whole recipe will make 4). We saved the leftovers for dinner!
