- Char the corn – Heat the olive oil over medium heat in a large skillet. Add the corn and cook for 5-7 minutes or until the corn is slightly charred. Set aside. Charred corn adds a smoky flavor and a touch of sweetness to this grain bowl recipe. You can use frozen corn if you don’t have fresh corn.
- Assemble – Combine the cooked rice or quinoa, black beans, red bell pepper, charred corn, and chopped cilantro in a large shallow bowl. Mix well. Make your dressing. For our Mexican-inspired today, we’re using Cilantro Lime Dressing, but you can use Green Goddess Dressing, Garlic and Lemon Cashew Cream, Lemon-Garlic Tahini, and Lemon-Honey Vinaigrette.

Ingredients
- 2 cups brown rice
- 2 cups black beans, drained and rinsed
- 2 ripe avocadoes
- 1 red pepper, diced
- 1 cup fresh cilantro
- 2 cups fresh greens
- dressing, homemade cilantro lime dressing
Instructions
- Assemble bowls with a scoop of rice, red pepper, black beans, fresh cilantro, fresh greens and top with pepitas.
- Drizzle with the sauce. Season to taste with additional salt and pepper, if desired, and serve.
- We assembled these ingredients into 2 bowls (although the whole recipe will make 4). We saved the leftovers for dinner!
